I have to admit, I have a new found love with greens. It started when I had to figure out what to do with all the spring greens we were getting with our farm share. Then, I read about all the healthy qualities. Well, what’s not to love? We were given two huge bunches of kale, along with lots of tomatoes, this week. Looking around my pantry and refrigerator I saw that I had white beans, chicken sausage, Parmesan cheese, and some pasta. I knew I could make a great dish out of this and stay on my clean eating plan. Healthy too! So here’s what resulted:
21 Day Fix amounts: 1 green container, 1 red container, 1 yellow container, 1 blue container (with Parmesan cheese), one tablespoon of oil.
- 3 cloves of garlic, minced
- 1 tablespoon of olive oil
- 4 cups of kale, 3 cups of swiss chard (we had the swiss chard hanging around. You can certainly use all kale)
- 1 15 oz can of white beans
- 1-2 tomatoes, chopped
- 1 pound of chicken sausage
- 6 oz pasta
- Parmesan cheese
Prepare pasta by cooking in a pot of boiling water for 8-10 minutes, until cooked.
Meanwhile, put garlic and oil in a pan and cook on medium until garlic is soft, 2-3 minutes. Add the chicken sausage and cook until heated through, 5-7 minutes. Add the tomatoes and white beans and cook for approximately 5 minutes. Add the greens (in this case kale and swiss chard) and cook until wilted.
Prepare the dish by using 1/4 cup of pasta (we have to stick to correct portions afterall!), adding the kale and sausage mixture, and topping with two tablespoons of Parmesan cheese.
